My league has a weight requirement for ball carriers which this year kind of screws my team. We are a heavy slow team with few players of weight to carry the ball.

Kids under 135 can ball carry under 145 can be a pass catching tight end.

We have 4 players under 135 and 1 player under 145

What would you do for an offense and why?

Our quarter back is smart but not super fast or athletic with about average throwing ability maybe a bit under average we are 11-15 team.

Out running backs are speedy one of our most athletic kids is 122 the most athletic kids is one of our 165 lb guards.

Our tight end is used to being a lineman but first year pass catcher.

Our offensive line blocking is great with a lot of heavies

What kind of blocking system do you know how to teach?  Start there.

The size of the ball carriers really doesn't matter too much if they hit the hole hard.

You can run just about any offense with a group like that if you get the blocking sorted out and play to the individual kids strengths.  Just don't call plays they aren't good at.

Pretty much anything except spread and maybe pro-style sounds like a good fit.  Single Wing or Wing-T could work with the athletic G as the QG.

I've done Dave Cisars Single wing as well as Beast I've done GOD GOO and a few others

Single wing it is then. Stick with what you know. Doable with the kids you have. Too late to learn a new scheme anyway. A good oline makes any offense work. That athletic guard you have will be great in Dave's system right where he is at.

You mean talk him into the ubsw? Good luck with that unless you are you the header? If so, don't talk him into anything, tell him.

I would not want to try to run an offense like that without a good QB.  That's headed for disaster.  If you do stay with the pro style spread stuff, consider moving one of the other athletic kids to QB.  A QB who can't run well or throw is a huge liability in that type of offense.  He has to give you something.  There's no reason for the defense to spread if the QB can't get the ball out there.  They'll just man up and pack the box.

It is so easy to feature the qb as a runner in spread, even without zone and power read that I think he has to be a good runner. Why handicap yourself? Our qb runs in spread were devastating to the opponent but our qbs could run and throw. There is no point in running spread without an athletic qb imho.

I was going to say Singlewing or Doublewing. Since you have experience with the SW stick with that. Put in your 6 and install the cues to help move the defense and you should be ok.

What's the rule on the defense?  Can some unlimited weight linebacker crush your runner?
