High School Single Wing in Texas

Hello, my in-laws just moved to the Austin area and have extended an open invitation to come down and try some real food.  I would also love to see some live Texas single wing.  I have tried many google searches and have come up empty. I was hoping for some help in connecting with a team down there. thank you

"Real food?"  Does that mean "barbecue?"  Because if it does, then North Carolina has not only better barbecue, but better Single Wing football.  You're in the land of "Grip It & Rip It," not "Ground & Pound." The land of ketchup-based 'cue, instead of sauceless 'cue.  Good luck in your search.

oh i've good Carolina bbq at the conclave, great stuff, Doc Ward brought it up... i'm hoping to get some Texas chili.  There was one high school in Texas that i knew of running the SWing, but I think they have moved on to something else

Not to mention the TEX-MEX food!!!  But, yes its all spread and air it out down here.  There was a DFW team (Rockwall-Heath I think) that experimented with the single wing a couple of years ago, but that only lasted one season.

--This is how it works, Robert:  if you have to put a sauce on it to make it taste good, then there's nothing authentic about it.  But if it tastes the way it's supposed to, without the ketchup or whatever 49 flavors come out of a plastic bottle to give the pig some flavor, then it's the real thang.  And in Eastern North Carolina, there's ONE thing they do better than anywhere else in the world.  And that's the 'cue!

Texas BBQ is all about the preparation and dry rubs.  Some people like to use swab juice while cooking.  But, that's definitely not the same as using sauce. I think it's the St. Louis and Memphis BBQ styles that really get into sauces.  Although, I must admit, there is a BBQ chain down here in Austin that has the motto: "THE SAUCE IS BOSS!"- which is why I avoid eating there.

I remember how my friends or I (depending on who was hosting) would put cheap pork steaks on the grill whenever we knew some known 'sauce-eaters' were going to be joining us.  We'd be damned if we were going to watch some idiot slather cheap BBQ sauce all over our real T-bone steaks. LOL!

Well, I laugh about it now.  But, damn... that used to be down right gut-wrenching to watch someone desecrate good meat with cheap BBQ sauce before they even took the first bite to taste it. It's an insult to the cook.

EDIT: I can't think of a any Texas HS that runs SW, either.

MO says the best conclave chili is from Virginia, and we have some of the best Single Wing too!

As an unbiased BBQ connoisseur who has tasted much North Carolina and Texas BBQ, I have to say the burnt ends in Kansas City are #1!

Being a Texan whose brother lives in NC it pains me to admit that you're correct. KC BBQ is very well thought out
Texas is close but dang KC is good.

Notice how I danced around the obvious in previous posts and not mentioning KC

If you are ever in KC, try it.  I got a sampler platter at Jack Stack's the first time.  The second time I told them to keep the ribs, chicken and brisket and ordered burnt ends only.  They're awesome!
